Barbecue sauce
The word barbeque is derived from the Spanish Barbacoa which refers to cooking in the open air on an open fire. The English version in fact made its way into the language in the seventeenth century.
Whilst the undisputed Kings of Barbecuing are the Australians and the Americans, clearly, we're catching up, as Rosie Sykes is now keen to tell us in our series on sauces for summer cooking - with Simon Parkes.
