It's generally agreed that a Mediterranean diet is good for you - all those tomatoes, garlic and extra virgin olive oil. But the Mediterranean does covers a lot of coast line.
Simon Parkes meets Lebanese cook and author Nada Saleh. She was born in Beirut, but has a fascination for the flavours of the entire Levantine region, taking in Syria and Turkey as well as the Lebanon.
In the first of our series, Nada Saleh shows us how to make a dish of Baked Kibbeh. Recipe for Baked Kibbeh Nada Saleh, 'Seductive Flavours of the Levant: Traditional Home Cooking from Lebanon, Syria and Turkey', Published by Robson Books, ISBN: 1-86105446-7
