When Diana Henry started researching her new cookery book Crazy Water, Pickled Lemons, she was determined that each dish should have some kind of magic.
Sometimes that would come from the ingredients: using things like lavender, pomegranates or saffron; other times from the seeming dissonance of elements within a dish like Catalan quince with honey aioli with pork stuffed chicken; or simply from the name of the dish or the story behind it.
