Beetroot and Coconut Soup |

The combination of beetroot and soup, doesn't always have to mean Borscht. With a few extra ingredients, it can become a much lighter soup with an Asian feel.
Chef Simon Rimmer took his inspiration for this recipe from Thailand, and he explains to Lesley Hilton why beetroot and coconut make perfect culinary partners.
