 The rehabilitation of a robust winter vegetable.
The parsnip is enjoying something of a renaissance. Parsnip chips are on all the best restaurant menus and the recent fashion for roasting root vegetables and for eating seasonally has contributed to its revival. There isn't much else in the shops at this time of year so how do you get the best from the parsnip?
